The Fish Fry is a permanent set of vendor huts beside the Oistins fish market, and the whole thing revolves around fish landed that day. Uncle George's and Pat's Place are the two names everybody repeats, but there are more than a dozen stalls and each has a following. You queue at the counter, order by the plate, and your fish comes off the grill with macaroni pie, rice and peas, plantain, breadfruit or a salad. Marlin, mahi-mahi, snapper, tuna, swordfish and flying fish are the standard line-up, plus grilled lobster in season and chicken for anyone who does not eat seafood. Around the eating area there is a bar with rum punch and Banks beer, craft and souvenir stalls, and a sound system that moves from soca and calypso into old-school reggae and line dancing as the night goes on. Come hungry, bring cash in Barbados or US dollars, and expect the queues to be longest between 7:30pm and 9pm.

Cruise passengers berthed in Bridgetown can reach Oistins in about twenty minutes, which makes the Fish Fry an easy evening for anyone on a late all-aboard or an overnight call.
